Auricularia Auricula-Judae, more commonly known as Judas ear, can be found across Europe, North America, Asia, Australia, South America and Africa. It has been used in China for thousands of years as a potent medicine to help with colds and fevers by reducing the amount of heat in the body. In Ghana, it has been used as a blood tonic. Many herbalists have used it to help with inflammation of the eyes or throat.

Judas ear mainly grows on elder trees, however it can also be found on beech, ash or spindle. It grows on dead and living wood in an ear-like shape with a brown color that darkens as it ages. The fruiting bodies are 3-8 centimeters across but can occasionally reach 12 centimeters. Generally it grows individually but can also be found in cluster. Young specimens are best for consumption and must be cooked thoroughly. It can be grown using sawdust and bags. It should be kept in the dark and needs humidity for the fruiting bodies to grow.
