Pleurotus ostreatus of the brown variety grows in North America whereas its blue counterpart grows in Europe. Brown Oyster mushroom grows in the forests of sub-tropical and temperate climates. It is responsible for decomposing deciduous trees, particularly the Beech tree. Interestingly, it is also carnivorous, consuming the nematode which is itself parasitic This makes for a healthy way to control the pest without using chemicals. Pleurotus ostreatus has been shown to have statins and lovastatins that help in lowering cholesterol in the body, as well as having antibacterial properties.* In fact, in 1950, it was observed that it inhibited a wide range of Gram-negative bacteria including Salmonella and Pseudomonas, and thus pleuromutilin was created, one of the first antibiotics isolated from mushrooms.

Brown Oysters grow individually or in clusters and take on a shelf like shape. It has a f an or oyster-shaped cap spanning 5–25 cm and tan or dark brown in color. Like many mushrooms, it should be picked young for consumption as it becomes tougher as it ages and its taste and smell deteriorate. It requires a lot of fresh air exchange in order to grow but is generally fairly easy to grow. It is light sensitive however and should be grown in black bags, nursery pots or buckets with holes in them.
